CINDER CHICKEN BREASTS | |
2 whole chicken breasts (about 1 lb. each), skinned, boned, split, and pounded thin 1/2 c. black sesame seeds 2 tbsp. butter 2 tbsp. soy sauce (Tamari Gourmet soy sauce is best) Lemon wedges (if desired) Spread sesame seeds thickly in center of a large sheet of wax paper. Turn chicken pieces, one at a time, in seeds, patting seeds to coat solidly; shake off excess. Place chicken in a single layer in a 9 x 13 inch baking dish. Melt butter and stir in soy sauce. Make small slits in chicken pieces and dribble some of the butter and soy sauce mixture over the chicken to make it moist during baking. Bake, uncovered, in a 400 degree oven until meat in thickest part is not longer pink when slashed (about 15 minutes). Garnish with lemon, if desired, and serve with remaining butter/soy sauce mixture. |
