PINEAPPLE UPSIDE DOWN CAKE (A
MICROWAVE RECIPE)
 
1/4 c. butter
1/2 c. firmly packed brown sugar
8 1/2 oz. (1 can) pineapple, drained and juice reserved
Maraschino cherries
2 eggs
1/2 c. (reserved) pineapple juice
1 pkg. (9 oz.) yellow cake mix (Jiffy is good)

Combine butter and sugar in 8 x 8 inch baking dish microwave 1 1/2 minutes to 2 minutes on High, or until butter and sugar melts. Stir.

Arrange pineapple rings in syrup. Place maraschino cherry in center of each pineapple ring.

Blend cake mix, pineapple juice and eggs in medium mixing bowl on low speed of electric mixer. Beat on medium 2 minutes. Pour evenly over fruit. Microwave 8 1/2 to 10 minutes on High, or until wooden pick inserted in center comes out clean. Rotate dish 1/2 turn after 5 minutes. Immediately invert onto serving plate and remove dish. Serve warm, cool with Cool Whip.

Since microwave ovens vary in power, you may need to adjust your cooking time.
