PETITE CHERRY CHEESECAKE 
1 c. vanilla wafer crumbs
4 tbsp. melted butter
8 oz. pkg. soft cream cheese
1/3 c. sugar
1 egg
2 tsp. lemon juice
1/2 tsp. vanilla

TOPPING:

1 can cherry pie filling

Line 12 muffin tins with paper baking cups. Combine cookie crumbs and melted butter. Spoon about 1 tablespoon crumbs into bottom of each cup and press gently. Beat cream cheese with 1/3 cup sugar, egg, lemon juice and vanilla until smooth. Spoon onto crumb shells. Bake at 350 degrees for 15 minutes, then cool.

Topping: Spoon cherry pie mix over cheesecakes and chill.
