SUMMER SQUASH CASSEROLE 
2 med. yellow summer squash
2 med. zucchini
1 sm. onion
1 c. cream of mushroom soup
1/2 c. sour cream
Seasoned stuffing mix

Cut zucchini and summer squash into slices. Chop the onion. Mix the soup and sour cream. Add to the vegetables. Place mixture into baking pan or casserole dish. Top with seasoned stuffing mix. Bake at 350 degrees for 45 minutes. (Either squash may be used alone as an alternative.)
