GROUNDNUT COOKIES 
Imperial:

1 lb. roasted groundnuts
2 tbsp. sugar
1 tbsp. lime or lemon juice
8 fl. oz. water

Metric:

450 g. roasted groundnuts
2 tbsp. sugar
1 tbsp. lime or lemon juice
200 ml. water

American:

8 c. roasted groundnuts
2 tbsp. sugar
1 tbsp. lime or lemon juice
1 c. water

Dissolve sugar in water in a saucepan and bring to the boil. reduce heat and when the water becomes slightly sticky, stir in the groundnuts and lime juice, stirring continuously until quite sticky. Pour into a buttered sandwich (cake) tin and spread evenly with a spatula. Mark into squares with the point of a knife, allow to cool and cut into squares.
