CELERY & CARROT DISH 
1 1/2 c. celery, diced
1 1/2 c. carrots, diced
1/2 c. water
2 tbsp. butter
1 c. milk
2 tbsp. flour
1 tsp. salt
1/8 tsp. pepper
1 tbsp. minced onion
3 tbsp. Parmesan cheese

Cook vegetables with water until tender. Melt butter. Add flour and milk for white sauce.

Add seasonings, cheese and onion. (Add more cheese to taste.) Add drained vegetables and pour into greased casserole. 1/4 cup buttered bread crumbs on top. Bake at 350 degrees for 25 minutes.
