BLACK BEAN CHILI 
1 lb. black beans, rinsed
2 qt. water
1 lb. lean ground beef, recommend chuck
2 c. chopped onion
1 tbsp. minced garlic
4 Jalapeno peppers, seeded and chopped
2 c. chopped tomatoes, little or no juice
2 tbsp. chili powder
1 tbsp. oregano
1 tsp. ground cumin
1 tsp. cayenne pepper

Combine beans with water. Cover; bring to a boil and boil gently for 1 1/2 to 2 hours, until tender, stirring occasionally. Saute beef; drain off grease. Saute onion, garlic and peppers in 2 tablespoons butter for about 8 minutes. Add meat back into pan of onions and add tomatoes, chili powder, oregano, cumin and cayenne pepper. Stir and cook for 5 to 10 minutes longer. Add to beans. Cook uncovered for 30 minutes and stir often. Serve with rice or plain.
