ZUCCHINI BREAD 
2 c. sugar
3 eggs
1 c. vegetable oil
2 c. grated zucchini (raw)
3 c. flour
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1/2 c. milk
1 tsp. vanilla
2/3 c. chopped nuts

Blend sugar, eggs, oil and the zucchini; blend thoroughly. Add remaining ingredients, except nuts; blend thoroughly. Add nuts. Pour in greased and floured loaf pans - filling 1/2 full. Bake in preheated 325 degree oven for 1 hour. Yields 2 regular loaves or 4 small loaves.

The small loaves make great gifts for the holidays, especially for teachers or co-workers.
