CARROT CASSEROLE 
1 lb. cooked carrots (sliced and drained)
1 med. onion sauteed in 1 cube butter
Slices of Velveeta (to taste)
Crushed potato chips

Place one layer of sliced carrots in the bottom of casserole dish. Pour sauteed onions over carrots then layer cheese, repeat as often as you wish. Sprinkle with crushed potato chips and bake uncovered 350 degrees for 30 minutes.
