BAHAMA GRITS 
1 c. cooked grits
3 ribs chopped celery
2 chopped onions
1 chopped green pepper
1 can crushed tomatoes
Pinch of oregano
Pinch of thyme
1 clove garlic
2 tbsp. brown sugar

Fry onions, pepper and celery until tender. Add tomatoes, oregano, thyme, garlic and sugar. Cook until thick. Add grits; stir and serve.
