BACON 'N CHEESE GRITS 
3 c. water
3/4 c. enriched white hominy quick grits
1/4 tsp. salt (optional)
6 slices bacon, crisply cooked, crumbled
1 c. (4 oz.) shredded Cheddar cheese

Bring water to a boil in heavy saucepan; stir in grits and salt. Return to a boil; reduce heat. Cook, uncovered, 2 to 4 minutes or until thickened, stirring occasionally. Stir in bacon and cheese; continue cooking over low heat until cheese is melted. Serves 6.
