DARK FUDGE BROWNIES 
1 teaspoon instant espresso coffee granules
1 teaspoon hot water
1 1/4 cup sugar
5 tablespoon butter, melted
1 teaspoon vanilla extract
2 eggs, lightly beaten
1 cup all-purpose flour
1/2 cup Dutch process cocoa
1/4 teaspoon salt
1/4 teaspoon baking powder

Combine coffee granules and hot water in a large bowl and stir well. Add sugar, butter, vanilla, and eggs; stir with a wire whisk until well-blended.

Mix flour, cocoa, salt, and baking powder. Stir until no streaks remain.

Add the flour mixture to the coffee mixture, stirring until well-blended.

Spread batter evenly in an 8-inch square baking pan coated with cooking spray.

Bake at 350°F for 25 minutes; allow brownies to cool in pan; slice while still warm.

Makes 16 brownies.

It is hard to find a great home made brownie recipe. Box brownies are hard to beat. As long as you don't over bake these, they are rich, moist, fudgy and delicious. I baked mine in a 8x8 glass baking dish, so I had to modify the temperature and baking time. I also added about 1/4 cup semi sweet chocolate chips, and reduced the sugar by about 1/8 cup. This is my go to brownie recipe. Simple, fast, and delicious.
