BROAD NOODLE PUDDING 
8 oz. broad noodles
3 tbsp. cooking fat
3 eggs, separated
1 tsp. cinnamon
1/4 tsp. nutmeg
3/4 c. chopped seedless raisins
1/2 c. sugar
1/8 tsp. salt

Boil, drain and rinse noodles according to package directions. Add fat, well beaten egg yolks and remaining ingredients. Lastly, fold in stiffly beaten egg whites. Mix well and pour into a greased casserole. Bake at 350 degrees 45 minutes or until browned. You can add almonds (reduce raisins) or apples and nuts. You can sprinkle bread crumbs over casserole before baking or use graham cracker crumbs. Makes 4 to 6 servings.
