BETA BRUNCH SOUFFLE 
12 slices bread, crusts removed
2 pkgs. frozen chopped broccoli
2 c. diced ham
1 lb. Cheddar cheese, grated
1 tsp. grated onion
6 eggs, beaten
3 c. milk
1 tsp. salt

Line 9x13 inch pan or casserole with trimmed bread slices, reserving some slices for top. Cook broccoli slightly; drain. Spread on bread. Add ham, 3/4 of the cheese and onion. Top with remaining slices of bread.

Combine eggs, milk and salt; mix well. Pour over casserole, saturating top layer. Sprinkle remaining cheese on top. Refrigerate overnight. Bake at 350 degrees for 50 minutes. Let stand for 10 minutes before serving. Yield: 8 servings.
