SEAFOOD FETTUCCINE 
1 lb. butter
6 onions, chopped
6 pieces celery, chopped fine
1 bell pepper
10 pieces garlic

Saute all ingredients in melted butter. Mix in:

Cook 5 minutes. Add 2 pounds Kraft jalapeno cheese and 2 cups half and half. Cook this mixture well and add seafood. For this amount I used 4 pounds peeled crawfish. I have used 2 pounds shrimp and 2 pounds of crab. After this has cooked until seafood is somewhat curled, add 2 bags (4 lbs.) fettuccine noodles (already cooked). May add a bunch of finely chopped parsley. I have also added chopped mushrooms to this.

Spread in a casserole and sprinkle 1 large can of Parmesan cheese on the top. Bake 35 to 45 minutes at 350 degrees until it bubbles. Serves 25.
