MOCK LASAGNA 
1 med. zucchini, sliced
1 sliced onion, separated into rings
1 or 2 sliced tomatoes
1 1/2 c. cottage cheese
1 1/2 c. shredded Mozzarella cheese
1 tsp. Italian seasoning
Pinch of garlic salt

Put 1 layer of squash in bottom of baking dish. Add layer of onion rings and layer of tomato slices. Sprinkle with salt, pepper, Italian seasoning and garlic salt. Spread with 1/2 of cottage cheese and sprinkle with 1/2 of Mozzarella cheese. Repeat all layers.
