SALMON CROQUETTES 
1 egg, slightly beaten
1 c. mashed potatoes
1 (8 oz.) can salmon, drained
1 tbsp. chopped pimento
1 tbsp. lemon juice
1/3 c. dry bread crumbs
1 tsp. grated onion
1/4 tsp. salt
Dash of pepper
Dash of cayenne
1 egg, slightly beaten
1/2 c. bread crumbs

Mix first 10 ingredients together in a bowl, adding enough bread crumbs so that mixture can be handled. Shape as desired; dip in slightly beaten egg, then in bread crumbs. Chill at least 1 hour. Fry in deep hot fat (375 degrees) about 5 minutes, or until golden brown. Drain absorbent paper. Serve with Mustard- Mayonnaise. 4 servings.

MUSTARD-MAYONNAISE:

Com bine 2/3 cup mayonnaise, 2 tablespoons prepared mustard sauce, 2 tablespoons capers and 1 teaspoon lemon juice; chill.
