GINGERSNAPS 
1 c. sugar
3/4 c. shortening or soft butter
1/4 c. molasses
1 egg
2 c. unbleached flour
2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves

Lightly grease (not oil) cookie sheet. Combine in bowl first 4 ingredients. Stir in remaining ingredients. Chill dough for easier handling. Heat oven.

Shape dough into 1 inch balls, then roll in sugar. Place 2 inches apart on prepared cookie sheet. Bake 8-10 minutes until edges are set. Cool 1-2 minutes before removing from cookie sheet. Taste the best warm from the oven when still chewy. Will get harder the longer they're stored. (1 cookie = 69 calories.)
