LOBSTER CASSEROLE 
1/4 c. butter
1 1/2 c. sliced mushrooms
2 sm. shallots, minced
1 bunch scallions, chopped
2 tbsp. flour
2 c. heavy cream
9 oz. fresh scallops
3 oz. fresh crab meat
10 oz. cooked Maine lobster
2 tbsp. Parmesan cheese
1 dash of salt, pepper, garlic powder & thyme
1/4 c. shredded Swiss cheese
Dried bread crumbs & paprika for garnish

Saute mushrooms, shallots and scallions. Pour bite-size seafood in 2 quart casserole. Add mushrooms, cream and flour. Season with salt, pepper, etc. Bake for 30 minutes at 350 degrees. Top with bread crumbs, paprika, Parmesan cheese and Swiss cheese. Heat again until cheese is melted and bubbly, approximately 15 minutes. Serve over pasta of your choice.
