BLACKEYE PEA CASSEROLE 
1 (16 oz.) pkg. blackeye peas
1 c. cooked rice
1 c. diced ham
1 (16 oz.) can tomatoes (chopped)
1/4 c. chopped onion
1/4 c. chopped green pepper

Cook peas as directed. Mix with rice, ham, tomatoes, chopped onions and chopped green pepper. Pour into buttered casserole dish and bake 45 minutes at 350 degrees.
