APPLE & PEAR COBBLER 
3/4 c. unbleached all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. cream of tartar
1/2 tsp. salt
1/4 c. sour cream
3 tbsp. plus 2 tsp. sugar
1/2 tsp. ground cardamom
1/4 tsp. ground cloves
3 tbsp. chilled unsalted butter, cut into 6 pieces

Combine flour, 3 tablespoons sugar, baking powder, cloves, cardamom and salt. Add butter and cut in until mixture resembles coarse meal. Add sour cream and blend just until dough begins to come together. Do not form ball.

Transfer dough to large plastic bag. Working through bag, form into ball and flatten into 9 inch square. Chill while preparing fruit.

FILLING:

2 lbs. Golden Delicious apples, peeled, cored & sliced into 1/4 inch wedges
2 lbs. pears, peeled, cored & sliced into 1/4 inch wedges
1 tbsp. fresh lemon juice
3/4 c. sugar
1/4 tsp. ground cloves
2 tsp. vanilla extract
1/4 c. all-purpose flour

Transfer fruit slices to 8 x 8 x 2 inch baking dish. Combine lemon juice and vanilla in small bowl. Pour over apples and toss to coat. Combine 3/4 cup sugar, flour and cloves in small bowl. Sprinkle over fruit and toss to coat. Rearrange fruit to make compact and wipe rim of dish clean. Place dough atop fruit and gently tuck edges under at 3 inch intervals. Sprinkle with remaining 2 teaspoons sugar. Sprinkle 1/4 cup sliced almonds over top. Place cobbler on cookie sheet and bake until crust is browned, about 40 minutes. Makes 6 servings. Serve warm with ice cream.

I just made this using frozen pears and apples that I had done up this past summer. I had already added sugar and crushed tapioca and lemon juice. So when making this I cut back on the sugar and the flour a little. I didn't have any luck rolling out the topping so I just dropped evenly in small amounts all over the top. This is AWESOME!!! Thank you!
