BAKED PORK TENDERLOIN 
1 (3 lb.) fresh pork tenderloin
Salt and pepper to taste
1/4 c. apple brandy
2 tbsp. soy sauce
2 tbsp. firmly packed brown sugar

Lightly score the tenderloin fat. Sprinkle very lightly with salt and pepper. Marinate the pork in a mixture made of the brandy, soy sauce, and brown sugar for several hours, turning the meat often. Drain off the marinade and reserve it. Place the pork in a baking dish and bake at 325 degrees for 1 hour and 15 minutes or until the meat is tender and brown. Baste the meat with the reserved marinade at frequent intervals. Yield: 3 to 4 servings.
