1 med. onion, chopped 1 green pepper, chopped 1/2 lb. ground beef 1/2 lb. smoked sausage 1 c. rice 1 (16 oz.) can stewed tomatoes 1 (8 oz.) can tomato sauce 1 1/2 c. hot water 1/2 tsp. salt 1/4 tsp. garlic salt Dash or 2 of Tabasco Saute in a deep cast iron fryer the onion and pepper until limp. Add and fry ground beef until all pink color is gone, then add rice and stir. Add the rest of the ingredients. Bring to a boil, stir and cover. Turn fire very low and cook 20 minutes. Check a couple of times and add boiling water if necessary. Let stand covered for 15 or 20 minutes after cooking is completed. This recipe can be changed by the use of almost any meat, shrimp, or fish that you have left over. I always use sausage but you can use hot sausage. |
