ZUCCHINI WITH APPLES 
1 1/2 lbs. sm. zucchini, thinly sliced
4 tbsp. butter
1 med. onion, chopped
2 eating apples, chopped
2 fresh tomatoes, peeled and chopped
2 tbsp. chopped parsley
Salt and pepper to taste

Set a small pan of water to boil. Drop zucchini slices into the boiling water for 30 seconds. Remove immediately and drain.

Melt the butter in frying pan and saute the onion. Add the apples and stir well to coat with the butter. Add tomatoes and blanched zucchini. Stir well. Then add parsley.

Season the mixture and leave it to cook, covered, over a gentle heat for 5-10 minutes until zucchini are soft. Good source of Vitamins A and C.
