APPLE CAKE 
1 c. whole wheat pastry flour
1/2 c. brown sugar
3 tbsp. butter
1 tbsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. buttermilk
1 egg
2 lg. red apples, peeled and finely chopped

In bowl combine flour, sugar, cinnamon. Cut in butter. Take out 1/4 cup of mixture, set aside. Beat soda, salt, buttermilk and egg and mix with apples and flour mixture. Toss 1/4 cup flour mixture with nuts and sprinkle over cake batter. Bake at 350 degrees for 30 to 35 minutes.

NOTE: Serve with ice cream or whipped cream.
