MEXICAN RICE 
1 c. white rice
2 tbsp. oil
1 clove garlic (minced)
1 med. onion (chopped)
2 chicken bouillon cubes
3 c. water
1/2 can tomato sauce
Salt to taste
1/2 bell pepper (optional)

Fry rice till light brown. Add onion, garlic and saute' together. Add tomato sauce, pepper. Dissolve bouillon in water. Add to rice. Bring to a boil, then simmer about 15 minutes until rice is fluffy.
