SPINACH PIE 
2 crust deep dish pie crust (Pet Ritz or other)
2 pkg. leaf spinach
4 eggs
1 onion
1/2 c. or more grated cheese (Locatelli, Romano or any other)
1 tbsp. oil
Dash pepper

Let pie crust thaw at room temperature. Meanwhile, cook spinach. Drain water out of spinach thoroughly. Saute onion in oil. Add all ingredients together. Put into pie crust. Make beehive strips out of other crust. Put on top of spinach. Bake at 350 degrees for 25 minutes.
