YAM MALLOW | |
1 lb. yams, about 3 1/2 c. sour cream 1 egg 1/2 tsp. salt 1/4 tsp. cinnamon 3/4 c. miniature marshmallows Cook unpeeled potatoes 30-35 minutes. Peel. Heat oven to 350 degrees. In mixer bowl, combine potatoes, sour cream, egg, salt and cinnamon. Beat on medium speed until smooth. Pour mixture into buttered 1 quart casserole and top with marshmallows. Bake 30 minutes or until marshmallows are puffed and golden. Serves 4. (Can easily be doubled or tripled for company.) |
