NEW MEXICO PORK CHOPS 
6 rib or loin pork chops (cut 3/4")
1 tsp. salt
3/4 c. uncooked rice
2 tbsp. powdered taco seasoning mix
1 (8 oz.) can tomato sauce
1 1/2 c. water
2/3 c. shredded cheese
1 med. size green pepper cut in rings

Brown chops in shortening. Arrange in 9 x 13 inch baking dish and season with salt. Sprinkle rice around chops. Combine taco mix, tomato sauce and water. Pour over chops and rice.

Cover tightly with foil and bake at 350 degrees for 45 minutes. Remove from oven. Sprinkle with cheese and arrange pepper rings. Cover and continue cooking for 20 minutes or until done.
