CAULIFLOWER WITH CHEESE SAUCE 
1 head cauliflower
2 tbsp. butter
2 tbsp. flour
1 tsp. dry mustard
1/4 tsp. salt
Dash of white pepper
1 c. milk
1 c. shredded sharp American cheese (about 4 oz.)
Paprika

Remove outer leaves and stalk from cauliflower; leave whole. Cook covered, in 1 inch salted boiling water for about 20 minutes. Drain; keep warm. Heat butter over low heat. Blend in flour, mustard, salt and pepper.

Cook, stirring constantly until thickened and mixture boils 1 minute. Stir in cheese; heat until melted. Place cauliflower on platter. Pour on sauce; sprinkle with paprika. Serve surrounded with cooked peas, if desired. 4 to 6 servings.
