CAULIFLOWER WITH CHEESE SAUCE AND BACON | |
1 lg. cauliflower Salt 4 tbsp. melted butter 4 tbsp. flour 2 1/2 c. milk 1/2 tsp. pepper 1 c. grated cheese 12 slices fried bacon, crumbled Remove outside leaves and stalks from cauliflower; soak, head down, in cold salted water for 20 minutes. Place in large amount of boiling salted water. Cook, uncovered for 10 to 20 minutes or until tender; drain. Combine butter and flour in double boiler; add milk, 1 teaspoon salt and pepper. Cook, stirring frequently, until thickened; add cheese, stirring until melted. Pour over cauliflower; top with bacon. Yield: 8 servings. |
