PINEAPPLE COOKIES 
1 c. shortening
1 c. brown sugar
1 c. white sugar
4 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs
1 c. crushed pineapple
1 tsp. vanilla extract
1 c. chopped nuts, optional

Cream shortening and sugars together in bowl. Add 1 egg, half the pineapple and half the dry ingredients. Beating well after each addition. Repeat and add all remaining ingredients. Drop by teaspoonfuls onto greased cookie sheet. Bake at 400 degrees for 10 minutes or until brown.
