VEAL PARMESAN 
2 tbsp. butter
4 pieces veal, 1/2 inch cutlets, steaks, chops
1/3 c. evaporated milk
2 tbsp. Parmesan
1/4 c. flour
1/2 tsp. salt
Few grains pepper
1/3 c. evaporated milk
1/2 c. Parmesan
8 oz. can tomato sauce

Set oven at 350 degrees. Melt butter in 12 x 8 inch pan. Dip veal in 1/3 cup evaporated milk. Roll in mixture of 2 tablespoons Parmesan, flour, salt and pepper. Put into pan. Bake, uncovered, 30 minutes. Meanwhile, mix remaining evaporated milk and Parmesan. Take veal from oven. Pour tomato sauce around veal. Spoon cheese mixture on veal. Bake for 20 to 25 minutes more until meat is tender. Makes 4 servings.
