SALMON SOUFFLE 
2 c. white sauce
1/2 c. dry bread crumbs
3 eggs
Salt & pepper
2 tsp. grated onions
2 c. cooked salmon (or canned salmon)

Beat egg whites. Prepare white sauce. Add grated onions, dry bread crumbs, 3 egg yolks, salt, pepper and salmon. Add the beaten egg whites and fold into the mixture. Pour into a greased casserole and bake 30 minutes at 350 degrees.
