EGGPLANT FRITTERS 
1 beaten egg
1 tsp. salt
1/2 tsp. pepper
1/2 c. bread crumbs, flavored
1/2 flour
2 tbsp. flour
1 lg. eggplant, cooked and mashed (peel before cooking)

Mix all ingredients. Fry in deep fat until golden brown. Serve hot with butter or applesauce.
