MANGO PORK CHOPS 
6 pork chops (1/2 to 3/4-inch thick)
1 ripe mango, chopped and pureed in the blender
1 c. chopped onion
2 tbsp. soy sauce
1 tsp. vinegar
1/3 c. cold water
1/2 c. chopped celery

Trim fat from chops. Heat fat in skillet until you have 2 teaspoons melted fat. Remove trimming. Brown chops. Season with salt and pepper. Pour off excess fat. Add water to mango. Add to chops with celery, onion, soy sauce and vinegar. Cover pan. Simmer on low heat 45 minutes to 1 hour until tender. Remove chops. Mix cornstarch with water. Stir into sauce and cook until mixture thickens. Return chops to skillet. Cover and simmer until heated through. Serve with steamed rice.

This was very good! Celery and Mango, was not sure about that, but delicious. My changes: I was trying to use up some dried Mango. I used that, no fresh Mango, put it in the blender with some water, but added a handful of raisins. The Mango / Raisin combination compelled me to add a tablespoon of Curry, and I at least doubled the Soy Sauce. Also, I was at an Asian supermarket, the only Celery was "Chinese Celery," which I have never used. I thought it had a slightly stronger flavor than regular celery, this helped the flavor to not be buried under the curry, mango, and other flavors. Next time I would add some fresh Mango slices during the last minute of cooking!
