MANGO PORK CHOPS | |
6 pork chops (1/2 to 3/4-inch thick) 1 ripe mango, chopped and pureed in the blender 1 c. chopped onion 2 tbsp. soy sauce 1 tsp. vinegar 1/3 c. cold water 1/2 c. chopped celery Trim fat from chops. Heat fat in skillet until you have 2 teaspoons melted fat. Remove trimming. Brown chops. Season with salt and pepper. Pour off excess fat. Add water to mango. Add to chops with celery, onion, soy sauce and vinegar. Cover pan. Simmer on low heat 45 minutes to 1 hour until tender. Remove chops. Mix cornstarch with water. Stir into sauce and cook until mixture thickens. Return chops to skillet. Cover and simmer until heated through. Serve with steamed rice. Serves 6. |
