WHOLE WHEAT BANANA BREAD 
1 1/4 c. all-purpose flour
1/2 c. whole wheat flour
1 tsp. baking soda
1/4 tsp. salt
1/2 c. oil
1 egg
1 c. mashed ripe banana
1 tsp. vanilla extract
Vegetable cooking spray

Combine first 4 ingredients in small bowl. Stir and set aside. Combine sugar and oil in a medium mixing bowl. Beat at medium speed of an electric mixer 2 minutes or until blended. Add egg, beat until light and lemon-colored.

With mixer running at low speed, add flour mixture alternately with banana, beginning and ending with flour mixture. Blend well after each addition.

Pour batter into 8 x 4 x 2 inch loaf pan coated with cooking spray. Bake at 350 degrees for 45 minutes or until a wooden pick inserted in center comes out clean. Cool 15 minutes on a wire rack.
