WHOLE WHEAT BANANA BREAD 
1/2 c. shortening
1 c. brown sugar
2 eggs
1/3 c. hot water
1 c. (2-3) mashed bananas
1/2 c. chopped walnuts
1/3 c. coconut flakes (optional)
1 c. whole wheat flour
1 c. flour
1/2 tsp. salt
1 tsp. baking soda

Preheat oven to 350 degrees. Cream shortening and sugar in bowl until light and fluffy. Add eggs and water, beating thoroughly. Stir in bananas, coconut, and nuts. Sift remaining ingredients together and add to banana mixture. Bake in loaf pan 60-70 minutes or until toothpick inserted in center comes out clean. Cool on rack 15 minutes before serving. Best when served warm.
