WHOLE WHEAT CARROT - BANANA
BREAD
 
1/2 c. butter
1 c. packed brown sugar
2 eggs
1 c. all-purpose flour
1 c. whole wheat flour
1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1 tsp. baking soda
1 c. ripe mashed banana
1 c. finely shredded carrots
1/2 c. chopped walnuts

In a mixer bowl, beat butter for 30 seconds. Add sugar; beat until fluffy. Beat in eggs. Combine flours, soda, baking powder, cinnamon, and 1/2 teaspoon salt. Add dry ingredients and banana alternately to butter mixture, beating after each addition. Fold in carrots and nuts. Pour into 2 greased 7 1/2 x 3 3/4 x 2 inch loaf pans. Bake in 350 degree oven for 40 to 50 minutes. Makes 2 loaves.
