WHOLE WHEAT CARROT - BANANA
BREAD
 
1/2 c. butter
1 c. packed brown sugar
2 eggs
1 c. flour
1 c. whole wheat flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. cinnamon
1 c. mashed bananas
1 c. finely shredded carrots
1/2 c. chopped walnuts, optional

Beat butter in a mixer bowl for 30 seconds. Add brown sugar; beat until fluffy. Beat in eggs. Combine both flours, soda, baking powder and cinnamon. Add dry ingredients and banana alternately to butter mixture, beating after each addition. Fold in carrots and nuts.

Pour into one 9 x 5 inch greased loaf pan. Bake at 350 degrees for 50-60 minutes or until a toothpick comes out clean from the center.
