WHOLE WHEAT CARROT-BANANA BREAD | |
1/2 c. butter 1 c. packed brown sugar 2 eggs 1 c. all-purpose flour 1 c. whole wheat flour 1 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. cinnamon 1 c. mashed bananas 1 c. finely shredded carrots 1/2 c. chopped walnuts In mixer bowl beat butter for 30 seconds. Add sugar; beat until fluffy. Beat in eggs. Mix flours, soda, baking powder, salt and cinnamon. Add dry ingredients and bananas alternately to butter mixture, beating after each addition. Fold in carrots and nuts. Pour into 2 greased 7 1/2 x 3 3/4 x 2 inch loaf pans. Bake at 350 degrees for 40-50 minutes. |
