CARMELA CASCIO - MARIANA'S MEAT
BALLS
 
1 1/2 lbs. lean ground beef
5 slices sour dough bread made into crumbs
4 eggs
3 oz. grated Romano cheese
1/4 c. chopped fresh parsley
2 cloves garlic, minced
Salt and pepper
Olive oil

Mix all ingredients, except oil, until well blended. Shape into bite size balls. Fry in a small amount of oil until browned all over, adding more oil if needed. Remove from pan and serve with the Basic Italian Tomato Sauce found in this book.

Makes about 24 balls.
