CATHY AND RENNIE'S "MEXICAN
WEDDING BALLS"
 
1 c. soft butter
1/2 c. fine sugar
1 tsp. vanilla
2 1/4 c. sifted flour
1/4 tsp. salt
1 c. finely chopped pecans

Mix butter, sugar and vanilla thoroughly. Sift together flour and salt; stir in. Mix in nuts. Chill dough.

Roll dough into 1-inch balls. Place on ungreased baking sheet and bake at 400 degrees for 10-12 minutes. Cookies do not spread. While still warm, roll in confectioners' sugar. Cool. Roll in confectioners' sugar again. Makes about 4 dozen cookies.

I add 1/2 teaspoon orange juice and 1/2 teaspoon lemon juice, along with the full teaspoon vanilla, it takes the almost too sweet taste away and leaves a beautifully seasoned cookie. I learned this from my Hungarian Grandma.
