BRUNCHY CHEESE BREAD BALLS 
1 cup milk
1/2 to 1 tsp. salt
1/2 to 1 stick butter
1 cup unbleached all-purpose or whole wheat pastry flour
4 eggs
1 1/4 cups shredded cheese
1/2 to 1 1/4 cups grated Parmesan
garlic, basil, etc. (optional)

Preheat oven to 400°F. Heat milk, salt and 1/2 to 1 stick butter in medium saucepan until butter melts. Remove from heat, whisk in flour until smooth. Stir with wooden spoon over very low heat until mixture forms a cohesive ball. Remove from heat.

Beat in eggs one at a time until mass is a smooth dough: a mixer is useful for this. Beat in shredded cheese and Parmesan (I like it cheesy). Form a circle of golf ball to tangerine sized dropped balls of dough onto a large greased pan or baking sheet, top with smaller sized dough balls. sprinkle with Parmesan.

Bake at 400°F for about 35 minutes or until puffy and golden. Adding aromatics, garlic, or herbs is optional but unnecessary. This is so delicious!
