HOLIDAY PECANS OR WALNUTS 
2 egg whites
Pinch of salt
1 c. light brown sugar
1/2 stick butter
1 lb. walnut pieces or pecan halves

Beat egg whites and salt until stiff (like for meringue). Fold sugar in very gradually (I use a spatula). Do this in a large mixing bowl. Fold in the nuts. Make sure nuts are all coated. Melt butter in 10x15 inch or large jelly roll pan.

Spread nut mixture over butter. Bake in 250 degree oven for 50 to 60 minutes, stirring nuts completely every 20 minutes. Keep eye on them near the end. You do not want them to burn. Cool. Store in airtight container.
