PRIME RIB ROAST AT ITS BEST | |
5 to 6 lb. rib roast 1 tsp. Accent 1 tsp. paprika 2 tbsp. Worcestershire sauce salt and seasoned pepper to taste Mix the Accent, paprika, Worcestershire sauce, salt and seasoned pepper together. Rub into all sides of roast. Preheat oven to 500°F. If using heavy roasting pan (like Dutch oven bottom), put about 1-inch ice cream salt in bottom of pan. Place seasoned roast on salt, then begin pouring salt on roast, sprinkling with water lightly, just wet enough to make it stick together. Keep adding salt until you have built a wall around the roast, on top and well up on sides. Keep sprinkling lightly with water, but not enough to have water standing in pan!! Place UNCOVERED in oven. Cook 12 minutes per pound for medium done or 15 minutes per pound for well done. Salt will form a thick covering which you will need to crack off before removing from pan to serve. |
