JOHNNY CAKES 
2 c. white corn meal
2 1/4 c. boiling water
1/2 c. milk
1 egg, well beaten
2 tsp. salt (optional)
3 tbsp. sugar (optional)
2 tbsp. baking powder

Mix all dry ingredients together and then add boiling water; mix good. Then add milk and egg. Let stand for 10 minutes. Then fry in your skillet the same as you do pancakes with vegetable oil.

HAMBURG GRAVY:

2 lbs. hamburg
2 med. onions, sliced
3/4 c. flour

Saute onions; drain and set aside. Fry hamburg; cut up in small pieces. Pour oil off, leaving just a little bit; add sauteed onions and then keep stirring and sprinkle flour until all oil is absorbed and flour is a light brown. Add water until the thickness you want.
