CORN BREAD (JOHNNY CAKE) 
7/8 c. sifted all-purpose flour
1/4 c. sugar
4 tsp. baking powder
1/2 tsp. salt
1 c. cornmeal
1 egg, beaten
1 c. milk
1/4 c. melted butter

Preheat oven to 375 degrees. Blend or sift together flour, sugar, baking powder, and salt. Blend in cornmeal. Make a well in the center of dry ingredients. Combine and add the egg, milk and melted butter. Stir until combined. Pour into a greased 8 x 8 inch cake pan. Bake in preheated oven for 25-30 minutes.
