VERMONT APPLE-NUT CAKE | |
3 c. sifted flour 1 tsp. baking powder 1/2 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 3/4 c. vegetable oil 1 tsp. vanilla 2 eggs 1 1/2 c. sugar 1 c. chopped nuts 4 c. chopped, peeled apples, about 8 med. or 6 lg. apples Preheat oven to 350 degrees. Lightly grease a 10 inch tube pan (not one used for angel cakes). Sift together flour, baking powder, soda, salt and cinnamon into mixer bowl. Beat in oil. Stir in apples and vanilla. In separate bowl, beat eggs, then gradually add sugar and beat until light. Fold egg mixture into apple mixture gradually. Fold in nuts. Spread in pan. Bake in preheated 350 degree oven for 1 hour and 10 minutes or until done. Cool 5 to 10 minutes in pan; turn out. Delicious with whipped cream or ala mode. |
