APPLE-NUT-NUTMEG CAKE 
1 3/4 c. flour
1 1/2 tsp. baking soda
1 scant tsp. nutmeg
1/2 c. butter, softened
1 2/3 c. sugar
1 tsp. vanilla
2 eggs
1 c. finely chopped walnuts
1 lb. tart apples, peeled, cored and coarsely shredded
2 tbsp. confectioners' sugar

Mix well flour, baking soda and nutmeg; set aside. In large bowl cream butter, sugar and vanilla until light. Beat in eggs until light and fluffy. Stir in flour mixture a bit at a time until just blended. Stir in nuts and apples. Spread evenly in greased 13 x 9 x 2 inch pan. Bake in preheated 350 degree oven for 40-45 minutes. Carefully cut in squares; cool in pan on rack. Serve warm or cooled with a sprinkle of powdered sugar.
